BEBBERI GUDALU

A quick and healthy stir fry using boiled black eyed peas, onions, and seasoned with very basic spices. Easy to make and kid friendly too.

Equipment

  • Pressure cooker

Ingredients

  • 1 cup Black eyed beans
  • 1 Onion medium, thinly sliced. optional
  • 2 Green chilli
  • ½ tsp Mustard seeds
  • ½ tsp Cumin seeds
  • Salt to taste
  • ½ tsp Turmeric powder
  • 1 sprig Curry leaves
  • 1 tsp Oil
  • 1 tbsp Cilantro finely chopped

Instructions

  • Wash and Soak the beans in 2 cups of water for 1-2 hours
  • Add the soaked beans to the pressure cooker along with soaked water, add a tsp of salt and pressure cook for 1 whistle.
  • Cooked beans should be bit firm yet mashes when pressed.
  • Heat a pan and add oil for tempering, once the oil is hot enough add in mustard seeds and cumin seeds and let it splutter
  • Now add in slit green chillies, curry leaves and chopped onions and saute for a minute
  • Now add turmeric powder, salt and mix well and let it cook until onion turns translucent
  • Add the strained boiled beans to the pan, mix well and cook until the water evaporates.
  • Add in chopped cilantro and serve warm as it is or as accompaniment with rice/rotis

Notes

  • Omit adding onions if you're making a fasting friendly dish and also Jain-version.
