GODHUMA NOOKA SHEERA

Godhuma nooka sheera/Cracked Wheat Dessert Recipe with a simple and easy recipe, which is a moist and soft pudding oozing with the richness of the ghee. Perfect for any festive occasions.

Equipment

  • Pressure cooker ( if you're using pressure cooker method)
  • Wok

Ingredients

  • 1 cup Cracked wheat
  • 1 cup Jaggery
  • 10 Cashews
  • 1 Cardamom
  • ½ cup Ghee
  • ½ cup Milk
  • 1 cup Water
  • 10 Raisins

Instructions

Pressure cooker method

  • Heat the pressure cooker, add ghee and dry roast the cracked wheat on medium flame until it turns golden brown and smells nutty and aromatic.
  • Add milk, water, crushed cardamom pod and give a nice stir.
  • Cover and pressure cook for 3 whistles.
  • Heat a small pan, add a tbsp of ghee and roast the cashews and raisins until golden brown. Turn off the stove and keep them aside.
  • Add the grated jaggery to the cooked cracked wheat and give a nice stir and let it cook on medium flame until jaggery is completely absorbed by the cracked wheat.
  • Add in roasted nuts and raisins and tbsp of more ghee and serve warm.

Stovetop method

  • Heat a wok, add a tbsp of ghee and roast the cashews and raisins until golden brown. Transfer them to a plate and keep aside.
  • In the meanwhile heat a saucepan, add water, jaggery and let it come to a rolling boil and turn down the flame to medium.
  • Now add in ¼ cup of ghee and roast the cracked wheat on medium flame until it turns golden brown and smells nutty and aromatic.
  • Add in milk, water jaggery syrup, crushed cardamom pod and give everything a good mix and cook until the liquid is completely absorbed by the cracked wheat.
  • Finally add in roasted cashews, raisins and serve warm.

Plant based version

  • Heat a wok and dry roast the cashews until they turn golden brown, transfer them to a plate and keep aside.
  • Now dry roast the cracked wheat in the wok on low flame until it has this nice nutty aroma and turns golden brown.
  • Add in raisins, water, crushed cardamom, any plant based milk and cook until the liquids are completely absorbed by cracked wheat and then add in jaggery.
  • Serve warm topped with nuts of your choice.

Notes

  • You can use make this completely vegan by skipping out ghee and dry roasting, substitute the cracked wheat with quinoa and follow the plant based method above.
  • You can add in more nuts like almonds, pistachios and make it more nutritious.
