PALA POORILU

Ingredients

For the poori dough

  • cups Whole wheat flour
  • 2 tbsp Cooking oil
  • 1 pinch salt
  • Water to knead

For flavored milk

  • 3 cups Whole milk / Full fat milk
  • 4 tbsp Poppy seeds
  • 3 pods Cardamom
  • 3 tbsp Rice flour
  • ¾ cup Sugar

Instructions

Make a poori dough

  • In a mixing bowl add whole wheat flour, salt, oil mix it. Add some filtered water just enough to make a semi hard dough.
  • Cover and let the dough rest until we make the flavored milk.

Make flavored milk

  • In a blender jar add poppy seeds, whole cardamom pods, rice flour and make a coarse powder.
  • Now 4 tbsp of water and blend the mixture to make a creamy fine paste.
  • Heat a saucepan, add milk, keep stirring and let it come to a rolling boil.
  • Add the poppy seed paste to the boiling milk, reduce the flame to medium, give it a good stir and from this point keep stirring continuously to avoid the milk sticking to the bottom.
  • Add sugar or sweetener of your choice and cook until the milk thickens slightly.
  • Reduce the flame to low and keep it on heat until we prepare the pooris.

Prepare the pooris

  • Heat a kadai/wok, add oil enough for deep frying. Let's roll some pooris now.
  • Take the dough, divide it into 15 equal portions and roll them into balls.
  • Using some dry flour dust the rolling surface, roll each dough ball into thin pooris.
  • Once the oil is hot enough for frying pooris, drop in one rolled poori at a time. Fry on both sides until it's evenly cooked, these pooris need not puff up.
  • Place the fried poori on a paper towel to drain out excess oil. And repeat the procedure for the remaining dough.

Serving the Pala poorilu

  • Method 1 - Drop the fried poori one at a time in the warm flavored milk, soak it for a minute on both sides place them on a serving tray. Later while serving place the soaked poori on serving plate with flavored milk in bowl/glass separately.
  • Method 2 - Place the fried pooris in a serving plate, pour warm flavored milk on top of them as desired. Dig in when pooris have soften a bit.
  • Sprinkle some chopped almonds, or nuts of your choice on divine Pala poorilu and dig in. Bon Appétit.

Notes

  • You can add either fresh grated coconut/dry coconut in flavored milk, add it while making the poppy seed paste.
  • You can make a huge batch of flavored milk ahead, warm it when needed and make pooris instantly.
  • You can add some cashews, almonds, pistachios in the flavored milk by blending them along with poppy seeds mixture.
