SESAME & MORINGA STIR FRIED RICE

A healthy, quick and easy stir fried rice flavored with sesame & moringa spice mix.

Equipment

  • Wok

Ingredients

  • 3 cups Cooked rice
  • 3 tbps Sesame and Moringa spice mix
  • ½ tsp Turmeric powder
  • 1 tsp Red chilli powder
  • Salt to taste
  • cup Green peas
  • 1 stick Lotus root Sliced
  • 4 Garlic cloves
  • 1 tbsp Cilantro finely chopped
  • 2 tbsp Oil

Sesame moringa spice mix

  • 2 tbsp Black sesame seeds
  • 1 tbsp Moringa leaves air dried
  • 2 Garlic cloves
  • 2 Whole dry red chillies
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tbsp Black gram dal/Urad dal
  • Salt to taste

Instructions

Sesame and moringa spice mix

  • Dry roast sesame seeds, moringa leaves, urad dal, coriander seeds, cumin seeds, sliced garlic, dry red chillies and grind everything make a spice mix.

Making the stir fried rice

  • Heat a wok, add oil and once its hot add in mustard seeds, cumin seeds, sliced garlic, curry leaves and fry for a minute until garlic turns golden brown.
  • Now add in sliced lotus root, green peas, turmeric powder and let them fry for 2-3 minutes.
  • Add in cooked rice, sesame moringa spice mix, salt, chilli powder and give everything a good mix.
  • Cover and cook on medium flame for 5 minutes.
  • Finally add in chopped cilantro leaves and serve warm.

  • You can substitute the rice with millets or quinoa or cauli rice to make it diet friendly.
