SESAME & MORINGA STIR FRIED RICE
A healthy, quick and easy stir fried rice flavored with sesame & moringa spice mix.

- 3 cups Cooked rice
- 3 tbps Sesame and Moringa spice mix
- ½ tsp Turmeric powder
- 1 tsp Red chilli powder
- Salt to taste
- ⅛ cup Green peas
- 1 stick Lotus root Sliced
- 4 Garlic cloves
- 1 tbsp Cilantro finely chopped
- 2 tbsp Oil
Sesame moringa spice mix
- 2 tbsp Black sesame seeds
- 1 tbsp Moringa leaves air dried
- 2 Garlic cloves
- 2 Whole dry red chillies
- 1 tsp Coriander seeds
- 1 tsp Cumin seeds
- 1 tbsp Black gram dal/Urad dal
- Salt to taste
Sesame and moringa spice mix
Dry roast sesame seeds, moringa leaves, urad dal, coriander seeds, cumin seeds, sliced garlic, dry red chillies and grind everything make a spice mix.
Making the stir fried rice
Heat a wok, add oil and once its hot add in mustard seeds, cumin seeds, sliced garlic, curry leaves and fry for a minute until garlic turns golden brown.
Now add in sliced lotus root, green peas, turmeric powder and let them fry for 2-3 minutes.
Add in cooked rice, sesame moringa spice mix, salt, chilli powder and give everything a good mix.
Cover and cook on medium flame for 5 minutes.
Finally add in chopped cilantro leaves and serve warm.

- You can substitute the rice with millets or quinoa or cauli rice to make it diet friendly.
